Recipe Wednesday: Skinny Chimichangas

Today's recipe is for healthy chimichangas! I'm always skeptical when someone tries to make a dish that I love "skinny". I feel like by making it healthy it will take away the flavor. While this chimichanga wasn't dripping with red sauce and covered in cheese like they normally are at the restaurants, it was still good.

When I made these, I only used 1/2 the can of chili peppers.  Next time, I will use the whole can. I was afraid of there being too much of a kick, but they could have used a little more kick!
