Recipe Wednesday: Skinny Chimichangas
Today's recipe is for healthy chimichangas! I'm always skeptical when someone tries to make a dish that I love "skinny". I feel like by making it healthy it will take away the flavor. While this chimichanga wasn't dripping with red sauce and covered in cheese like they normally are at the restaurants, it was still good.

A Few Updates Around The House
I have been working on a few updates around the house. Actually, these updates weren't totally my doing.
The first is an updated coffee station. In an effort to get things off the counters, I wanted to move my Keurig onto the coffee station with the other coffee maker. However, there wasn't enough room to have them both on the existing coffee station. I went on the hunt for a new coffee station, but couldn't find anything that fit the bill. I found something that was in the right price range, but wasn't tall enough. My husband, being the crafty man that he is, created a pedestal for the shelf to sit on so it was the height we were looking for. I was on a work trip last week, and Andrew surprised me by having my new coffee station put together!
I wanted to show off the bay window in the front room, and I feel like the curtains now accomplish that goal. The red side curtains were purchased from Target as well as the valance. The sheers in the middle were purchased from JC Penny. The curtains all had to be ordered online since they are the 95 inch length, which most stores don't carry in stock. Don't mind the clutter on the table.
And finally, we have new lamps in our bedroom. The lamp on Andrew's nightstand was shorting out. So, before we started an electrical fire, I wanted to get the lamps replaced. I spotted a lot of good options at TJ Maxx. The lamps we ended up with were on clearance for $29.99 each. Compared to prices elsewhere, I think these were a bargain.

Kitchen Update Part 2
Since my last post, I did get up the energy to go to Lowes to address the issue of the microwave. I spent an hour and a half searching for any other microwave that didn't have the express cook option. As suspected, there were no others aside from LG and Samsung. Both are currently held up in California due to the dock workers strike. Well, actually I dont know for sure where they are at, but that is why I'm guessing they are hung up. I confirmed, as suspected, that no one had placed an order in the system for our microwave. Luckily, I spoke with the person who originally placed our order. She seems to be about the only one who knows what is going on. When I walked out of Lowes on Saturday, we had an order in the system (I watched it be entered into the system). With luck, our Samsung microwave will be here before the end of the month.
Now, onto the second part of the update. Last week, Andrew was away on business, so I decided to paint. He hates the smell of paint, so I try to do it when he is gone. I went with gray, which is what we had in the kitchen at the other house.

When the color first went on, I was a little afraid it was going to be too light. After a couple of coats, it wasn't as light as I thought it might be.
I wasn't convinced I liked the color all over and wanted to change things up a bit. I had a can of Dutch Boy Honest Abe left from my bathroom painting project. I have wanted to do a backsplash in the kitchen, but don't want to spend the money to do a glass backsplash right now. So, I thought I would use the darker gray to getva backsplash effect.
Check out that beautiful sharp line; pretty proud of that!

I'm happy with how this project turned out. Now, on to the cabinets. I'm trying to decide if we are going to paint them, or resurface them.
