Recipe Wednesday: Stuffed Peppers

Stuffed peppers wasn't really something I made until fairly recently.  Last week, I did a different variation which I think was quite delicious.   Although, I would experiment with a few more spices next time.

This recipe uses roast beef and provolone cheese.  However, last week we had leftover pot roast I used in the peppers.

These are quick and easy for a weeknight dinner!
