As promised, here is the recipe for last week.
Upside Down Ravioli
8 oz. Jumbo Shells
1 lb. ground beef
2 Tbs. extra virgin olive oil
6 oz. bag baby spinach
1 C. finely chopped onion
1 garlic clove, minced
Small container ricotta cheese
1 tsp. salt
1/4 tsp. black pepper
1/8 tsp. ground nutmeg
1 egg
1/4 C. finely grated Parmesan cheese
1 jar Pasta Sauce (your choice)
Preheat oven to 350 degrees
Cook jumbo shells according to package (reserve 1/2 C. pasta water)
Cook ground beef in a skillet over medium-high heat, drain the grease, stir in oil, spinach, onion and garlic. Add some of the reserved pasta water, cook 10 minutes. Stir occasionally. Remove from heat; add seasoning and blend well. Let the mix cool and add egg and cheeses. Pour 1 C. sauce into 9x13 baking dish. Fill jumbo shells with meat mix and place in baking dish. Pour remaining sauce over shells. Cover with foil and bake 30 minutes or until heated. Makes 4-6 servings.

Tomorrow night if it isn't midnight when I get done outside, I will post and update on our yard work. We were busy bees this weekend. The deck is partially stained, the path is complete, the stairs from the path are in, the edge work on the path is done, and more flowers have been planted. I hope to have the deck finished up in the next couple of night, but there is only so much daylight when I get home from work. I will try to post pictures tomorrow night.
